Hot Dog Cheddar Casserole

1/4 cup olive oil

1 medium green pepper, diced

2 small sweet onions, diced

2 Tbsp flour

salt and pepper to taste

2 1/2 cups milk

1 Tbsp prepared mustard

2 cups shredded Cheddar cheese, divided

1 package egg noodles, cooked and buttered

8 beef or turkey franks

Preheat oven to 350 degrees F.

In a heavy skillet, put the olive oil, green pepper, and onions and cook until slightly softened.

Stir in flour, and add salt and pepper if desired.

Add milk and continue stirring until thickened.

Add mustard and 1 1/2 cups of shredded cheese, continuing to stir until the cheese melts.

Combine this sauce with cooked egg noodles.

Cut franks in 1/2 inch slices, then add franks to the noodles.

Pour in a baking dish and sprinkle with remaining cheese and bake in preheated oven until bubbly around the edges, about 20 to 30 minutes.

Serves 4 to 6.
